Here my Mum comes to the forefront again – her pancake batter is simple and it seems flop-proof which is always a great thing …
Pancake Batter (makes about 8 pancakes)
1 egg
2 tablespoons self-raising flour
3 tablespoons milk
Mix all the ingredients together with a whisk until there are no lumps and bumps and refrigerate for at least 1 hour (but can safely be stored for a day or two) Oh, and you can multiply this recipe easily I have done it x 20 with great success …
For the filling:
1 juicy sweet medium sized pineapple, peeled, and diced
250 mls cream, whipped up to stiff consistency
1 tablespoon icing sugar, sieved
1 teaspoon cinnamon & 1 pinch of nutmeg
OR
½ teaspoon vanilla powder
Whip up the cream, stir in the icing sugar and spices of your choice.
Heat a small amount of oil in a frying pan, and cook your pancakes. Keep them on a plate covered with a cloth until they are all done.
Just before serving, stir the pineapple through the cream, then pile the pineapple cream mixture into the pancakes and roll up as usual.
Sprinkle with a little extra icing sugar and serve as quickly and as hot as possible.
Another idea for a dinner party might be to layer the pancakes and pineapple cream mixture, piling up to resemble a cake – drizzle with melted chocolate and serve as slices.
